The full clusters were pressed and the juice let to settle in an oxidative way and then fermented in concrete egg and matured in egg with lees for 10 months. It has 12.5% alcohol with a sharp mouthfeel and remarkable acidity and freshness. It has fruit and the saline part of the limestone, fresh and tasty.
