This sweet wine is made from grapes that are (perhaps counterintuitively) harvested early to retain acidity. The fruit is then dried in the sun for 24 months until what are essentially raisins are pressed into amphora and vinified. Rich, decadent and yet impressively balanced, the finished wine evokes peach, nectarine, apricot, dates, fig, lemon pie, orange zest and hayloft. Savour through 2030 and beyond.
